Chicken and Cheddar Biscuit Casserole
A casserole is a perfect way to enjoy a main course without having to cook anything else. And for a mom’s day meal, you know that you’ll be getting the main course!
Ingredients
2 (10 ounce) packages frozen biscuits
1 cup sour cream
3-4 cups shredded chicken
½ cup green onions
¼ cup milk
¼ cup cheddar cheese
Directions
Cook the frozen biscuits according to package directions. Once they are fully cooked, slice them in half and set aside.
Next, mix the sour cream, milk, and cheese together in a medium sized bowl until well combined. Then set this mixture aside.
Once you’ve got your cheese sauce made, it’s time to get cooking! Next, place the shredded chicken into a large skillet and let it brown over medium heat. Once it is browned, stir it in and let it cook for 3-5 minutes.
Finally, layer the cheese sauce and the biscuit halves into an 8×8 inch casserole dish. Top with the chicken and serve.
Fried Chicken with Gravy
A fried chicken dinner isn’t complete without some gravy. This gravy is very simple to make and is perfect for this meal!
Ingredients
6 boneless, skinless chicken breasts
Oil for frying
Salt and pepper to taste
6-8 ounces of country ham
3 cups of chicken stock
½ cup of white vinegar
½ cup of onion powder
2 tablespoons of garlic powder
3 tablespoons of dried thyme
½ teaspoon of paprika
Directions
After washing the chicken, pat dry and season with salt and pepper. Place them in a large ziploc bag and marinate for at least 2 hours or overnight in the refrigerator.
Heat oil in a large skillet over medium heat. Place the chicken in the hot oil, and fry it for about 7 minutes, or until it is cooked through. Remove the chicken from the skillet and set it aside.
Next, pour all the liquid from the skillet into a medium sized saucepan. Add the onion powder, garlic powder, and thyme, and whisk to combine. Add in the remaining ingredients and bring to a simmer over medium heat. Reduce the heat to low and allow to it to cook, and serve it hot.
